Day 13 and 14

Day 13

The day started with some more of the sweet potatoes hash with scrambled eggs and sausage. It was delicious, especially with a dash of frank's and half an avocado.

Lunch was some more what I made yesterday. Korean BBQ ribs, london broil, and brussel sprouts.

Dinner was at a friend's house for his birthday and I had a piece of salmon and some veggies. I stayed away from the cupcakes and didn't have any. So proud of myself :)

Day 14

The day started out a little hectic because I didn't get a chance to make breakfast before hand. So I had to wake up a little earlier and made some scrambled eggs. I topped it off with half an avocado. Not the best breakfast, but it's better than eating nothing.

Lunch was a little bit of rice with some korean bbq ribs, london broil, and I bought some kimchi from whole foods.
Dinner was some more of the london broil with some potatoes and a little bit of rice with shrimp curry.
I was so hungry that I forgot to take a picture. Oops!!

Another weekend came and went...

Day 10:
TGIF!!!! And luckily, today was not a repeat of yesterday. I had time to sit to enjoy my breakfast drink my coffee. Breakfast was some scrambled eggs with sweet potatoes hash and sausage topped with half an avocado, and a cup of coffee.

Lunch was the same left over that I've been eating the whole week. Stuffed peppers with some chicken and stuffed jalapenos. 

Getting home today was a nightmare. I made the mistake of taking the back roads to avoid all the traffic on the highway and those roads weren't even plowed or salted. The whole ordeal took me 2.5 hours to get home. I was so excited to go to the gym too, but because of the snow and being stuck in traffic, I just stayed home and played with the pup. After coming back in from playing in the snow, I made a repeat of what I made a few days ago. A piece of flank steak and an egg nest (sweet potatoes and 2 eggs)

Day 11:
Woke early this morning and I was craving an omelet so right into the kitchen I went and made one. It had peppers, onions, bacon, and avocado in it and on it.

For lunch I was craving some pho, so off I went to one of my favorite pho places, Pho Saigon. I ordered a large special Pho with all the toppings and jazz.

After lunch I headed out for some food shopping. Stopped at my favorite butcher shop and got a 4 pound piece of London Broil and 3 pounds of short ribs. I then went to the corner produce stand and picked up some stuff. Everything was extremely cheap and fresh.

For dinner, I made shrimp coconut curry and tried my luck at some home made srarachi, but I will stick to the bottle.

Day 12:
Today I was craving pancakes. I looked up some recipes and found a good one that require coconut flour, and luckily, I have some. So for breakfast, it was banana pancakes with bacon and an egg.

Lunch and dinner was all over the place. I was out walking around the city with some friends and I got a thing of mussels. Dinner was a little bit of the shrimp curry and some of the korean bbq short ribs I made. The rest of the day was spent cooking enough food for the week. I made korean bbq short ribs, london broil, and some brussel sprouts.

Day 8:
Breakfast was a 2 egg omelet with some bacon and fire roasted veggies.

Lunch was my stuffed peppers that I made over the weekend and some stuffed jalapenos. I also had a cup of my root veggies soup

Since it was so cold, I decided to stay home tonight and not go to class. So with the extra time, I decided to get fancy with dinner. I had a couple of flank steaks sitting in the fridge so I got that out and grilled it. I also had a few sweet potatoes, and i shredded it with my new food processor. I was inspired by a recipeI saw online and made a sweet potato egg nest. It was delicious and really to make.

Day 9
What a crazy day!!! I was in a validation study and there were so many hiccups and problems that I spend the whole entire day there. No breakfast, or lunch. The only time I had a chance to eat was around 4:15, when I got back to my desk. So I had my breakfast then of sweet potato hash, scrambled eggs, and sausage. 

I was exhausted when I left work, but decided to make it to the 7:30 class. It was great and I PR'ed my power clean by 15 pounds. Who knew that starving myself all day would lead to such great a PR. But I don't think I will be starving myself again unless I have to.

Dinner was a protein smoothie with chocolate protein powder, BCAA, coconut milk, a dollop of peanut butter, a banana, and some ice. I also pan fried half a chicken breast on some sausage fat.

Long day and I was glad to hit the bed fairly early and got a little bit more sleep then I usually get.

Day 7

Breakfast was a 2 egg omelet with bacon and Trader Joe's fire roasted peppers and onion.

Lunch was a cup of my root veggies soup, stuffed chicken breast, green beans, and sweet potatoes.

Dinner was the same thing as lunch, lol.

Day 3, 4, 5, and 6

No updates this weekend because I had a lot of work to do, some friends visited, and watching two adorable but temperamental dogs.

   Day 3:
Had the usual omelet for breakfast and I resisted the temptation of going to lunch with some co-workers and stayed in and ate my left over. Dinner was some left over pulled pork and a salad.

  Day 4:
Breakfast was a delicious fresh off the stove omelet, no microwaving on Saturday!! Lunch was Pho. I'm pretty adventurous so I got the special with all the different cuts of meat and tripe. It was delicious!!

Dinner, I went with some friends to an Italian Restaurant, and the temptation was everywhere. The pizza, and pasta looked so good and delicious, but I prevailed and stayed away from ordering those things. So I went with what seems to be the only gluten free item on the menu, their antipasta. It was lettuce, salami, grilled peppers, carrots, olives, tuna, and an egg. It was pretty good, but my friends' dishes looked so much yummier.

  Day 5:
Had an omelet again...I don't know how much longer I will be able to eat omelet, but until I get sick of omelets, I will continue eating it. I tried mixing up my omelets with different seasoning and veggies so I don't get sick of it. This time, I used some of Trader Joe's fire roasted peppers and onions with some bacon and avocado. 

Lunch was at Cantina Los Caballitos. I got the steak burrito but just ate the rice, beans, meat, and guacamole. It was so good that I almost forgot to take a picture of it.

  Day 6:
Since I had yesterday off and not much planned, I figured I would go grab all the necessary stuff and cook for the whole week. On the menu were pork stuffed chicken breast wrapped in bacon, sausage stuffed jalapeno peppers wrapped in bacon, stuffed peppers with turkey and veggies, and winter veggies soup.

Another BCCC has started and I will try my best to keep this updated and update it for the whole 30 days.

My goals for this time are to eat better, cut out gluten, eat more vegetables, and hopefully get 1 muscle up.

Day 1:

Since BCCC started in the middle of the week and I had a hectic weekend, I didn't do too well on planning. So what I ate was some eggs for breakfast, avocado tuna salad with some greens for lunch, and some of my mom's seafood soup and left over ribs and a little bit of rice for dinner.

Day 2:
I made some roasted sweet potatoes with bacon, green beans and bacon, and cooked up some chicken sausages. This will last me 2 days so I will not be cooking tonight :-)

For breakfast, I took the recommendations of a few BCCC'ers and made it the night before and heat it up in the morning. Heating up eggs isn't the best way to eat it, but it still tasted a lot better than eating hard boiled eggs. So I scrapped up some left over stuff from my fridge, mainly steak and made an omelet with that and some bacon and peppers.

A lot of my meals will be eaten from containers because I made them in advance and just  heat them up as I eat

Lunch was chicken sausage with green beans, sweet potatoes and bacon. Yummy!!

Day 8

Sunday Funday!!! Not really :( I have so much work needed to get done and was running around all morning so I didn't really have much time. However, I did manage to squeeze in a nice bike ride. I did the Kelly Drive loop and around center city. When I got to 1st and South, I heard a hiss and I knew immediately that this ride is about to take a lot longer. My back tired lost all of its air and I had to walk the bike back. Luckily I wasn't that far from home.

Lunch was the left over roasted pork and the ribs from yesterday. I wrapped everything in lettuce leaves with some kimchi

That afternoon, I went to Trader Joe's to pick up some groceries for the week. Got some nitrate free bacons, grass fed ground beef, sausages, and spaghetti squash. I decided that I'm going to make paleo meatballs with spaghetti squash, and it turned out delicious
